ویسکوزیته یا گرانروی خاصیتی ست که سیال توسط آن در مقابل تنش برشی از خود مقاومت نشان می دهد. (میزان مقاومت سیالات در برابر تغییر شکل می باشد.)
ویسکوزیته در مایعات ناشی از جاذبه بین مولکولی است. با افزایش دما این نیرو ها و در نتیجه ویسکوزیته کاهش می یابد.
از طرف دیگر ویسکوزیته در گاز ها ناشی از حرکت تصادفی مولکول هاست.این حرکت نامنظم گازها با افزایش دما،
افزایش می یابد و در نتیجه آن ویسکوزیته با افزایش دما بیشتر می شود.
